OLIO EXTRAVERGINE DI OLIVA

Around here it seems that the olive tree has defied Nature and that Nature has returned the challenge. This harsh yet loyal competition has our 4.000 olive trees prospering and producing an olive oil with a unique characteristic: it isn’t greasy. We don’t know how we’ve achieved this: when our generation took over the farms, the olive trees were already there, majestic in their serenity.Their nature and Nature have created on our behalf this gift which we preserve with care and pride.

Olive varieties: Frantoio or Correggiolo 70%, Moraiolo 20%, Leccino 10%
Training system: vase-shaped
Altitude: 400-450 m.s.l.m.
Soil Type: for the most part alberese and galestro
Number of estate trees: 4000
Harvest and production methods: hand-picked into shallow plastic baskets between the end of October and the beginning of December. Olives taken to press within 18 hours of picking.
The oil, unfiltered, is stored in stainless steel vats where the solid matter in suspension undergoes a natural sedimentation.
Formats: 1 litre, 750 ml, 500ml, 250 ml
Colour: green with yellow highlights
Sensory profile: elegant and pleasantly balanced bouquet, very fruity with light complementary hints of vegetable. A sweet oil characterized by a very light piquant thrust.
It is gentle and light on the palate.
Uses: on both raw and cooked vegetables, as a dip for crudités and tasty bread squares, on legumes, on any kind of salad (green, mixed, pasta, rice, traditional Tuscan bread “panzanella”, etc), on boiled or broiled meat or fish, on braised game. It helps bring alive most dishes. Try using it in home-made mayonnaise!
