CLIMAX IGT TOSCANA
A modern Tuscan estate must come to terms with the best
known grape varieties in the world. Bindi Sergardi now grows
Merlot e Cabernet Sauvignon. This blend has given us our Climax.

Grape varieties: Merlot e Cabernet Sauvignon
Location of vineyards: selected Merlot grapes
from the Sorbino vineyard on the Marcianella estate (near
Chiusi) and selected Cabernet Sauvignon grapes from the Vigna
Ai Forcoli vineyard on the Mocenni estate (near Vagliagli).
Altitude: Chiusi 300-350 m.; Castelnuovo
Berardenga: 400-450 m. Exposure: Chiusi West/southwestern;
Castelnuovo Berardenga South /southwestern
Soil: Castelnuovo Berardenga: for the most
part alberese and galestro; Chiusi: tufo with striata of clay
Training System: spur cordon
Age of vineyards: 4 – 10 years
Vineyard density: 5.000 – 5.500 vines
per hectare
Vinification and aging: fermentation took
place in stainless steel vats and maceration lasted for 18
– 20 days at a controlled temperature of 28/30°C.
Shortly after alcoholic fermentation the wine was transferred
into oaken barriques (50% new) where malolactic fermentation
took place and where it was aged for 15 months. Once bottled,
the wine remained for a further 3 months stored on the estate
for refinement prior to release.
Colour: intense ruby red
Nose: an ample and complex bouquet characterized
by an optimum balance between wood and fruit. More evident
are the accents of cinnamon, cassis, and toasted hazelnut;
lighter yet equally pleasant is the hint of incense.
Taste: in the mouth an expression of volume,
sweetness and softness, all at the same time. An important
structure of excellent tannins.
Alcohol: 13,5 % Vol.
Notes: maintains its characteristic properties,
improves with aging.
Serving suggestions: red meat (both roasts and salted), game,
and mature cheeses.
Serving temperature: 18° C. Open 1 hour
ahead of time.
