CHIANTI CLASSICO
This wine best represents Bindi Sergardi and the Chianti
Classico territory. It benefits from the age-old Tuscan tradition
of Sangiovese grape selection.
Grape varieties: Sangiovese and a small
percentage of complementary varieties
Location of vineyards: the Signora Chiara
and Sodo delle Disgrazie vineyards on the Mocenni estate,
near Vagliagli. With a south/southwestern exposure, a terrain
rich in calcium deposits and excellent drainage properties,
these vineyards have over time proven to enjoy a particularly
fortunate vocation for the production of the best of Tuscan
wine.
Altitude: 430 m.
Soil: For the most part alberese and galestro
Training System: spur cordon
Age of vineyard: 6 – 15 yrs
Vineyard density: 5.000 – 5.500 vines
per hectare
Vinification and aging: fermentation took
place in stainless steel vats where maceration lasted for
14 – 18 days at a controlled temperature of 28/30°C.
Shortly after alcoholic fermentation the wine was transferred
into barriques – not brand new ones – where the
malolactic fermentation took place and where it was aged for
10 months.
Colour: intense ruby red
Nose: an ample and complex bouquet, with
distinct notes of spice and of fresh fruit.
Taste: soft, elegant and well-structured.
Maintains the freshness typical both of its zone of production
and of its grape variety.
Alcohol: 13,5 % Vol.
Notes: retains its characteristic properties
and improves with aging.
Serving suggestions: traditional accompaniments
are red meat (both roasts and salted), game, and mature cheeses.
Modern cuisine pairs this wine successfully with typically
Mediterranean first courses.
